FLOP PROOF BANANA BREAD

Ingredients

250ml sugar

125g butter/margarine

Pinch of salt

5ml bicarbonate of soda

65ml water

500ml cake flour

3 bananas, peeled and mashed

7,5ml of baking powder

2 eggs

Method

Preheat oven to 180C.

Cream the butter and sugar together.

Add the mashed bananas to the mixture.

Add the eggs in, one by one and beating after every addition.

Sift the flour and salt into the mixture.

Dissolve the bicarbonate of soda in the water and with baking powder, add to mixture.

Pour into bread tin and bake at 180C for 45 minutes. Turn out onto wire rack and allow to cool for 10 minutes before cutting
